Strawberry Filled Butter Cupcakes with Cream Cheese Frosting and Fresh Strawberry Garnish March 8, 2013

1 Box Duncan Hines Butter Cake Mix

5 Eggs

14 Tbs butter

1/2 Cup milk


1/2 Cup strawberry filling or strawberry preserves


1 8oz. Package of cream cheese

1 Stick of unsalted butter

2-4 tsp. Pure vanilla extract

3-4 Tbs. Whipping Cream

2 lbs. Powdered Sugar


Fresh strawberries, sliced


1. Preheat oven at 350, line a muffin tin with paper cupcake liners

2. Mix cake mix, eggs, butter, and milk

3. Fill cupcake liners, bake for 16 minutes (if using a mini cupcake tin, bake for 12 minutes)

4. Allow to cool before removing the center

5. Fill cupcakes with strawberry filling

6. Cream butter with a mixer

7. Add cream cheese and vanilla

8. Slowly add whipping cream, mix for 2-3 minutes

9. Add powdered sugar a few tsp. at a time, mixing thoroughly



I made these for my fabulous coworker’s birthday. The plan is to leave these on her desk as a surprise when she comes into the office tomorrow because her birthday is actually not until the 17th. Hopefully she’s looking up constructs for her dissertation and not reading this… 🙂

Running short on time? Just not in the mood to make cake from scratch? No problem! I found this on Pinterest and it’s pretty awesome…

To make your boxed cake mixes taste like they were homemade:

1. Add an additional 1-2 eggs to whatever the recipe calls for

2. Use milk instead of water

3. Instead of oil use butter and double the amount

That’s it! A few super simple alterations for cakes that will taste way better!Image
