Strawberry Filled Butter Cupcakes with Cream Cheese Frosting and Fresh Strawberry Garnish March 8, 2013

1 Box Duncan Hines Butter Cake Mix

5 Eggs

14 Tbs butter

1/2 Cup milk


1/2 Cup strawberry filling or strawberry preserves


1 8oz. Package of cream cheese

1 Stick of unsalted butter

2-4 tsp. Pure vanilla extract

3-4 Tbs. Whipping Cream

2 lbs. Powdered Sugar


Fresh strawberries, sliced


1. Preheat oven at 350, line a muffin tin with paper cupcake liners

2. Mix cake mix, eggs, butter, and milk

3. Fill cupcake liners, bake for 16 minutes (if using a mini cupcake tin, bake for 12 minutes)

4. Allow to cool before removing the center

5. Fill cupcakes with strawberry filling

6. Cream butter with a mixer

7. Add cream cheese and vanilla

8. Slowly add whipping cream, mix for 2-3 minutes

9. Add powdered sugar a few tsp. at a time, mixing thoroughly



I made these for my fabulous coworker’s birthday. The plan is to leave these on her desk as a surprise when she comes into the office tomorrow because her birthday is actually not until the 17th. Hopefully she’s looking up constructs for her dissertation and not reading this… 🙂

I charge a flat rate for cupcakes, no matter how simple or complex. However, at this time I cannot make individual cupcakes or orders smaller than one dozen.

$25 per dozen regular sized cupcakes

$25 per two dozen mini cupcakes

$25 per half dozen giant cupcakes

Please check out photos of cupcakes I’ve made in the past to get an idea of what I do. I love a challenge and coming up with interesting flavor combinations and collaborating with clients to come up with something completely unique and personalized, so please do not feel limited to the examples in the photos!
